Timofey Gumerov – PhD in Chemistry (Candidate of Sciences), Associate Professor, Associate Professor  of the Department of food production technologies of the faculty of food technologies at Kazan National Research Technological University (Kazan, Russia), the author of more than 65 publications on the issues of environmental protection, sewage treatment, and safety at the public catering enterprises. The sphere of scientific interest includes the study of biochemical processes in food in case of long-term storage and temperature processing, quantitative study of amino acid composition of having been under heat, mechanical and culinary treatment.
